What's the best way to achieve chunky (healthy) highlights on african-american hair?

I highlight my hair all the time using the foil method, My best friend whom is African-American wants me to highlight her hair. She says that the salon that she goes to only uses the cap and she wants chunky highlights. I told her that I wouldn't touch her hair 'till I was for sure that I wasn't going to make her hair too damaged (obviously dye damages your hair anyway). Do we have to use a special brand of dye that would cause less breakage? What about henna? and bleach? HELP ME OUT HERE I really want her her to BE ALL ABOUT THE BUSINESS! I love my sister ;D

I think with her being African American, she would look really good with auburn or copper highlights, do the mohawk method, top of head to back of crown and leave an inch between foils. For the highlights to be very prominate, she will need to have the hair that she wants highlighted to be bleached first or it will not show.
